The Wellington region in Victoria boasts a flourishing gastronomic scene and premium quality wines, thanks to its dry climate and volcanic soil that produce excellent Shiraz and other grape varietals like Chardonnay and Pinot Noir. The Macedon Ranges, at a higher altitude of 700 meters, is known for being the coolest grape-growing area in Victoria, resulting in grapes with higher acid content and unique aromas.
