Apollonia is a Sicilian-inspired cocktail bar located in the basement of a heritage-listed building in the Central Business District of Sydney, New South Wales.

The venue is part of a four-level acquisition by Singapore-based bar group House Made Hospitality, and is part of the company’s first Australian venture, Hinchcliff House. The bar is accessible via a blackened staircase and velvet curtains, and features a raised platform with prime people-watching seating. The venue offers a range of cocktails, including a signature Pineapple Negroni on tap, and a comprehensive wine list of local and Italian drops. There are 23 cocktails on the list, with Italian-inspired cocktails telling the story of The Godfather throughout. The signature Negroni on tap is a must-try, and there is also a midnight toasting ritual. Apollonia has a moody and romantic atmosphere, with dim lighting and a Sicilian-inspired decor. The venue has a capacity of 100 people and is open until 3am six nights a week. The bar is part of a multi-faceted venue, which includes a 200-person function space on the roof, an art deco bar and restaurant called Lana, and a bright and airy café and restaurant on the ground level called Grana.
