The vineyards are nestled on the northern slope of the Porongurup range, providing a dramatic backdrop when looking over the vineyard towards the main house.

The Porongurup sub-region in the Great Southern is known for producing long-lived rieslings with distinct floral characteristics, and pinots that show bright cherry, pomegranate and red berry characteristics. The wines have been time and again selected for medals and trophies at both regional and national wine shows within Australia, claiming a total of 9 wine show trophies.

The estate is named after the town of Aylesbury from which the Gibbs family hailed, first moving to the Ferguson Valley in 1883. The 22 acre vineyard is part of a family owned farm that has been passed down through five generations. It was cleared by hand by current owner Ryan Gibbs’ ancestor Samuel in the late 1800s. Various crops and herds were farmed on the land until vines were planted in 1998. The property is 200 hectares in total with approximately 9 hectares under vine.

The Ferguson Valley's climate is similar to south-west Europe; with cool wet winters and warm dry summers, perfect for grape-growing on the property's 200 hectares. Native Australian forests surrounding the property provides pure, clean water for vines throughout the summer, supported by fertile loam helping to retain moisture.

Aylesbury Estate makes a Sauvignon Blanc and a Merlot.

Description

Established in 1999, with the first vintage in 2006, Ilonka and Michael tend the land and organically grow grapes and wine.  They are passionate about sustainable living and pursuing excellence in wine making.

Small quantities and small batch winemaking is the focus of Bakheia Wines, with only 1000-1200 cases bottled each year. The wines are only available to the exclusive mailing list, limited to 400 to retain exclusivity and build mutual loyalty. Tastings of the wine is available at the vineyard by appointment only.

The wine making approach taken is minimalist with reds not fined or filtered before bottling allowing the natural settling of wine over time. Wines on offer include Grenache, Mourvedre, Graciano, Tempranillo, Shiraz, Malbec and Cabernet Sauvignon and sourced from the neighbors is Chardonnay, and Sauvignon Blanc to make Fume Blanc.

Pricing of the wines is rather unique, determined directly by mailing list members who sit down, taste and talk about the quality of the wine. Bakheia Wines pride themselves on keeping honest and ego free as reflected in the philosophical label "Aequitas".

Their Five Stones label is recognised for producing Australia’s finest Kosher and vegan-friendly wines.

The Below and Above label began in 2013 as a small-batch wine made by renowned WA contract winemaker Bruce Dukes.
